Irish pub cheese spread is a great way to start your feast on St. Patrick’s Day. I make mine with roasted garlic and good Irish cheddar because they are two of my favorite things in the world. Many of the other versions of pub cheese I have seen use caraway seeds, they are a strong flavor and one that many people don’t love.  So garlic is my answer. The Worcestershire sauce gives a nice depth of flavor to stand up to the Guinness, so don’t be scared. I will serve the dip with everything from rye toasts to sliced veggies at my St Pat’s parties. The leftover cheese spread is great on sandwiches from basic ham or roasted turkey to a burger hot off the grill. Enjoy!!

Irish cheddar cheese and Guinness spread

Ingredients

  • ½ lbs grated strong Irish Cheddar
  • 4 oz cream cheese at room temperature
  • 1 head roasted garlic
  • 1 tsp Worcestershire sauce
  • ½ cup Guinness Dark Stout
  • 1 tsp of paprika

Instructions

  1. Mix all cheeses in a food processor. Remove the individual garlic cloves from the skin. Add the beer, garlic cloves, Worcestershire, and paprika to the mixer. Mix until smooth.
  2. Serve with crostini (rye or pumpernickel bread would be great) and veggies as an appetizer or use a spread on sandwiches and burgers.
