Sometimes just want to get a veggie on the table that everyone will enjoy and that takes little or no effort.  That is why I love cinnamon orange acorn squash.  It’s fast, simple and so good. I often will pair my acorn squash with something coming off the grill because I can run into the kitchen toss the squash in the microwave and head back to the patio and rejoin the fun. Yes that’s right folks I am cooking this in the microwave, how easy is that? These acorn squash are sweet enough that kids love it; I have even been known to take a second helping of squash as desert when counting calories.

Cinnamon Orange Acorn Squash

Ingredients

  • 1 medium sized acorn squash
  • 4 tbsp frozen orange juice concentrate
  • 3 tbsp butter
  • 2 tsp cinnamon
  • 2 tbsp brown sugar or 1 tbsp brown sugar splenda

Instructions

  1. Rinse off the outside of you squash, slice in half and scoop out all the seeds in the center. Put half of all the ingredients but the sugar in one half the squash and the other half of these ingredients in the other half of the squash. Pop into the microwave for about 10 minutes.
  2. Add one tablespoon of the brown sugar to each half of the squash and return to the microwave for 3-5 more minutes depending on how tender the squash had already become. To check poke it with a fork. That’s it your done. If you are going to quarter the squash to serve pour the orange sauce into a container first then cut the squash and drizzle the sauce over the top.
